    Toasted white bread, 2 slices per person

    Fried red tomatoes, 2 thick slices per toast slice (4 per person)

    1 tablespoon bacon drippings

    1 tablespoon flour

    1 tablespoon tomato paste

    1½ cups full-fat milk

    Salt and pepper

    Make the gravy by stirring together the melted bacon fat, flour and tomato paste in a kind of henna roux. Stir until the flour stops bubbling, which means the raw, floury flavor is cooked out. Slowly whisk in the milk and stir until the gravy thickens slightly.

    Toast the bread (enough for 4 people), slice the tomato and sizzle it in a bit of butter or olive oil to heat through. Top the toast with the tomato slices and pour on the warm, bacon-flavored gravy. Serves 4.
