    List of Ingredients

    * 6 ounces thinly sliced cooked turkey
    * 6 ounces thinly sliced fully-cooked smoked ham
    * 8 thin firm ripe tomato slices
    * 8 slices white bread, toasted
    * Tangy Cheese Sauce
    * 4 thin slices sharp Cheddar or American cheese
    * 8 crisp-cooked bacon slices


    On individual heat-proof serving plates, evenly layer turkey, ham, and 2 tomato slices on each of 4 slices of toasted bread. Top each with a slice of toast and spoon cheese sauce over each serving. Top each with a slice of cheese. Place under a broiler and broil, 6 inches from heat source, until cheese is melted, bubbly hot, and lightly browned. Top each sandwich with 2 crisp bacon slices. Garnish as desired and serve immediately.

    Tangy Cheese Sauce
    about 1 1/4 cups

    * 2 tablespoons flour
    * 2 tablespoons butter or margarine, melted
    * teaspoon Worcestershire sauce
    * 2 to 3 drops hot pepper sauce or to taste
    * Pinch of paprika
    * Pinch of hot dry mustard
    * Salt and freshly ground white pepper to taste
    * 1 cup milk or reduced-fat or skim milk
    * 1 cup shredded sharp Cheddar or American or Swiss cheese or cheese-blend of choice, or 1 cup shredded reduced-fat cheese of choice

    In a small heavy saucepan, blend flour into butter until smooth. Stir in seasonings. Gradually add milk, blending well. Cook, stirring constantly, over moderate until thickened and bubbly hot. Reduce heat; add cheese, stirring until cheese is melted. Adjust seasonings to taste, if desired.
