    SPACE SHUTTLE STEAK SANDWICH

    Source of Recipe

    The Clever Cleaver Brothers

    List of Ingredients

    1 pound flank steak
    Rub

    1 tablespoon chili powder
    2 tablespoons dried oregano
    2 teaspoons garlic powder
1 teaspoon coarsely ground black pepper
    1 teaspoon salt
    1 tablespoon red wine vinegar
    1 tablespoon olive oil
    2 cloves minced garlic
    2 cups sliced onions
    1 cup sliced mushrooms
    1 teaspoon dried oregano
    1/8 teaspoon salt
1/8 teaspoon coarsely ground black pepper
    2 tablespoons red wine
1 cup nacho cheese sauce (from a can)
    4 6" French bread loafs

    Recipe

    1. In a bowl, combine all the RUB ingredients.

    2. Place the trimmed flank steak in an 8x8x2 glass baking dish. Rub both sides with the rub mixture. Cover and place in the refrigerator for a minimum 2 hours.

    3. In a sauté pan, heat the olive oil over medium heat. Add the garlic and heat for 30 sec.

    4. Add the sliced onions, mushrooms, oregano, salt and pepper, and cook for 5 minutes, or until the onion becomes golden brown. Deglaze the pan with the red wine and heat for 30 sec. Remove and hold for service. Note: This can be done in advance.

    5. Place the rubbed flank steak on a hot BBQ grill and cook over high heat for 3 minutes on each side. Turn heat to low and cook for an additional 10 minutes or until it reaches your desired level of doneness. Another method is to cook for 2 minutes, on each side under the broiler, then for approx 12 minutes in a 325 degree oven.

    6. Remove from the heat and slice steak in thin slices against the grain. Slice the rolls lengthwise, slicing almost all the way through. Divide the sliced meat between the rolls and top with the onion mixture. Top with some cheese sauce (not heated). ENJOY!

    yields: 4 portions
