    2 large baking potatoes, cut into 2mm slices, approximately 12 slices from each potato.
    2 x 15ml spoons olive oil
    2 large tomatoes, sliced
    3 slices smoked ham, cut each slice into 4
    3 slices of Dairylea slices, cut each slice into 4
    142ml carton soured cream
    ½ x 15g pack fresh chives, snipped
    salt and freshly ground black pepper

    Recipe



    Preheat the oven to 200°C, 400°F, Gas Mark 6.

    Brush the potato slices on both sides with oil and lay on a baking tray, cook for approximately 1 hour until golden brown.

    Layer up the sandwich, starting with a potato slice, tomato, smoked ham, Dairylea slices and then another potato slice.

    To make the dip, combine the soured cream, chives and seasoning to taste. Serve in a small dish.

    Serve the spud sandwiches warm with the soured cream dip.

    Serves: 4
