    Stinking Rose Grilled Sandwich

    4 oz brie, rind removed
    1 medium Yukon gold potato, scrubbed clean and sliced thin
    2 tbsp olive oil and additional for drizzling over garlic
    salt/ pepper
    8 cloves roasted garlic
    2 tbsp garlic chives, chopped
    2 tbsp margarine
    4 tbsp shredded parmesan cheese
    4 slices sourdough sandwich bread

    Recipe



    Preheat oven to 400 R. To roast garlic, slice horizontally to cut off top 1/3 of head of garlic to expose the inner cloves. Drizzle olive oil over cloves and salt/pepper. Wrap head of garlic in aluminum foil to seal completely. Bake in oven for 30 to 40 minutes. Cloves should be soft and buttery. Let cool 15 minutes before removing the cloves from the sections inside the head. Set cloves aside until ready to assemble.

    In a Teflon® coated non-stick skillet, heat 2 tbsp olive oil over medium high heat. Add potato slices and sauté until tender and golden brown on both sides, about 10 minutes. Turn down heat if getting too dark. Drain potato slices on paper towels, salt and pepper lightly.

    To assemble sandwiches, place all 4 slices of sourdough on the counter. Top two slices with a 2 oz of brie and spread to cover evenly. Top the other two slices with 4 cloves each of the roasted garlic and spread to cover evenly. Arrange 1/2 of the potato slices atop each of two brie sections. Top off the potato slices with 1 tbsp garlic chives for each sandwich. Place the remaining bread and garlic spread atop the sandwich to complete assembling. Spread 1/2 tbsp margarine on top of the bread facing up. Sprinkle 1 tbsp of parmesan cheese atop each margarine side.

    Warm a Teflon® coated non-stick skillet to medium heat. Once heated, place sandwich margarine side down on the grill. Spread margarine on the remaining top pieces of bread and sprinkle with 1 tbsp each of parmesan. Let cook about 2 minutes each side until golden brown and the brie is melted evenly. Remove from pan and let rest on cutting board a minute to solidify. Cut on the diagonal and serve. Makes 2 sandwiches.
