    List of Ingredients




    1 minced white onion
    1 ounce chopped garlic
    1/2 cup olive oil
    1/2 cup vermouth
    1 cup apple cider wine vinegar
    1/4 cup liquid smoke
    1 tbsp chopped rosemary
    1/2 cup diced plum tomatoes
    1 cup fresh cranberries
    1 cup dark brown sugar
    1/2 cup tomato puree
    1/2 cup maple syrup
    1 pint cranberry juice
    2 cups sun dried cranberries
    Julienne zest of 2 lemons
    Juice of 2 lemons
    1 bunch chopped flat leaf parsley
    salt and cracked black pepper to taste

    Recipe



    In heavy skillet, heat olive oil, add in onions, and saut� on low heat. Caramelize the onions. When onions are deep brown after 15-20 minutes, add in the remaining ingredients: chopped garlic tomatoes, tomato product, fresh cranberries, lemon zests, vermouth, rosemary, sugar, and parsley.
    Bring to a boil, add in lemon juice, salt and cracked black pepper, and then simmer for 10 minutes. Add in sun dried cranberries at this point as well.
    Puree the whole mixture in a blender.

    This sauce is great for swordfish and grilled shrimp.
