    1/4 cup plus 2 tablespoons cabernet
    3 tablespoons plus 1 teaspoon flour
    21/2 cups water
    11/2 tablespoons beef base
    1/2 cup tablespoons cabernet
    2 tablespoons Dijon mustard
    3 tablespoons parsley
    1/2 teaspoon black pepper
    1/2 teaspoon salt
    1/2 teaspoon rosemary
    1/2 teaspoon oregano

    Recipe



    1. Whip the flour into the wine to make a wash, making sure the flour dissolves.

    2. Place ingredients listed for Step 2 into a saucepan and bring to a boil. Add the wash and simmer for 1 minute. Remove from the heat.

    3. Transfer to an ice bath and stir while cooling. Refrigerate.


    Yield: 31/2 cups.
