List of Ingredients
1 lb highland stewing steak; diced
2 large onions; sliced
½ pint mild ale (banks' beer if you; can get it!)
1 tbs. tomato puree
½ pint dark meat stock
½ lb. black pudding; sliced
1 tsp. parsley
1 tsp. sage
1 tsp. thyme
1 bay leaf
¼ lb. mushrooms
oil to fry

Heat 1 tbs. oil into a medium sized pan. Fry the onions in oil until soft, lightly brown the steak and add the ale, tomato puree and herbs. Allow to reduce for 20 minutes. Add the dark meat stock and simmer for 1 ½ hours. Before serving, fry the black pudding slices and mushrooms in a separate pan. Add these to the rest of stew . Bring to the boil for 2 minutes then serve with chopped chives to garnish. This dish is best served with new potatoes and green vegetables. Enjoy.
