    List of Ingredients




    2 large Spanish onions, peeled
    3 large carrots, peeled

    5 large baking potatoes, peeled

    2 lbs. beef shoulder meat

    Flour, as needed

    3 T. vegetable oil

    1 T. butter

    1 pt. Guinness

    1 qt. homemade beef stock

    Salt and pepper, to taste

    4 bay leaves

    1 stalk celery

    Recipe



    Coarsely chop the onions, celery, carrots and potatoes. Cut the beef into bite-sized pieces. Dredge the beef in flour to coat.

    In a large pot, heat the oil and melt the butter. Brown the beef, stirring, add the Guinness and bring to a boil. Reduce the heat and let meat simmer until tender, 1-1 1/2 hours.

    In another large pot, combine the beef stock, salt, pepper, bay leaves, celery and onions. Bring to a boil, reduce the heat and let simmer until the onions become translucent. Add the carrots and potatoes and let simmer another 15 minutes. Pour the beef mixture into the vegetable mixture. Let simmer for one hour. Makes 10 generous servings. Leftovers can be frozen.
