CREAMY LEEK CHOWDER

1 package (1.8 ounces) leek soup mix
2 1/4 cup water
1 1/2 cups milk
1 can (14 1/2 ounces) whole new potatoes, drained and cut into small cubes
1 1/3 cups French's® French Fried Onions
2 teaspoons chopped fresh thyme or 1/2 teaspoon dried thyme leaves
1/4 teaspoon ground pepper
sour cream
chopped parsley
Recipe
1. Combine soup mix, water and milk in large saucepan; whisk until well blended. Stir in potatoes, 1 cup French Fried Onions, thyme and pepper. Bring to a boil over medium-high heat. Reduce heat to low. Simmer, uncovered, for 10 minutes. Stir occasionally.
2. Ladle into individual bowls. Top with sour cream, parsley and remaining 1/3 cup onions.
Makes 4 servings
Tip: To crisp and brown French Fried Onions, place on paper towels; microwave on HIGH for 1 minute.
