    List of Ingredients




    1/4 cup olive or sunflower oil
    1 medium onion, chopped
    1 medium tomato, chopped
    1 medium potato, peeled and cubed
    Handful spaghetti, broken up
    Handful penne pasta
    1 can (16 ounces) borlotti beans, drained and rinsed
    1 handful salad greens
    4 cups water, or more as needed
    Salt and freshly ground black pepper

    Recipe



    Heat the oil in a large, heavy-bottomed saucepan over high heat. Add the onion and saute until soft, about 5 minutes. Stir in the remaining ingredients and bring to a boil. Reduce the heat, cover, and simmer until the potato is tender and the pasta is firm-tender, about 30 minutes. Add more water, if necessary.

    Serves four.
