GREEN MOUNTAIN POTATO CHOWDER

List of Ingredients
2 quarts beef broth
1 pound potatoes, peeled and cubed
2 carrots, peeled and diced
3 tomatoes, diced
3 leeks, thinly sliced
1/2 celery root, diced
3 sprigs parsley
1 bay leaf
1 teaspoon thyme
1 teaspoon salt
1/8 teaspoon pepper
1/4 cup sour cream
Croutons (below)
Recipe
In a large saucepan, bring beef broth to a boil; add potatoes, carrots, tomatoes, leeks, celery root, parsley, bay leaf, thyme, salt, and pepper. Return to a boil. Cover and simmer for 30 minutes.
Remove parsley sprigs and bay leaf. Stir in sour cream. Simmer for 1 minute. Ladle into serving bowls; garnish with croutons and bacon.
CROUTONS
4 ounces bacon, diced
4 slices pumpernickel, diced
In a large skillet, fry bacon until partially cooked. Add pumpernickel cubes; fry until bacon is dark and bread crisp.
