    1 tbsp extra-virgin olive oil
    1 cup red onion, diced
    1/2 cup red bell pepper, diced
    1/2 cup yellow bell pepper, diced
    1 jalapeno pepper, seeded and minced
    2 tsps fresh garlic, minced
    1 tbsp fresh ginger, minced
    1/2 tsp dried thyme leaves
    1/2 tsp ground allspice
    1 15-oz can black beans, rinsed and drained
    1 15-oz can black-eyed peas, rinsed and drained
    1 cup fresh or frozen okra, cut into 1/2-inch pieces
    1/3 cup fresh orange juice
    1/3 cup jalapeno jelly
    1 11-oz can mandarin orange segments, drained
    3 cups cooked basmati or jasmine rice

    Heat olive oil in large skillet over medium-high heat. Saute onion, peppers and garlic until tender, about 6 minutes. Stir in fresh ginger, thyme and allspice. Cook 3 minutes longer, stirring frequently.

    Add black beans, black-eyed peas, okra, orange juice and jelly to mixture. Heat to boiling. Reduce heat and simmer until okra is tender, about 10 minutes. Stir in orange segments and cook 2 minutes longer.
    Serve over rice.
