    Several decades ago we fell into conversation with a young Navajo chef in a run-down Holbrook ham-and-eggs place. On the ever-popular topic of food and preparing it, he confided with an air of super secrecy this old tribal remedy for an empty stomach. It's been a never-failing favorite through all these years. Good nourishment. Great flavor. Easy to fix.


    List of Ingredients




    2 Tbsp. COOKING OIL
    1 med. ONION, diced
    2 cloves GARLIC, sliced
    1 lb. GROUND BEEF
    3 cups WATER
    3 CARROTS, cut in two-inch lengths
    3 med. POTATOES, quartered
    2 stalks CELERY, sliced
    1/2 cup frozen PEAS
    1 tsp. each OREGANO, CUMIN, SAGE, PEPPER (coarse ground)
    1/2 tsp. SALT
    3 Tbsp. FLOUR
    1 cup WATER
    1/2 cup KETCHUP

    Recipe



    Heat oil in heavy frying pan or dutch oven; cook onion and garlic slowly to golden brown. Add ground beef and brown. Add three cups water, vegetables and spices, and bring to a boil. Mix flour in one cup water and slowly stir into mixture to thicken. Lower heat and simmer uncovered one hour. Stir in ketchup and serve.

    Serves 4
