    Herbal Tonic Chicken Soup

    2 pieces chicken breast half without skin, bone in. (approx. 1 pound)

    1 piece pork blade chip (8 oz.)

    16 pieces dried Dioscorea Root (Wai San)

    1/4 cup dried Medlar Seed (Kei Chee)

    1 each dried black dates

    6 each dried red dates

    1 piece fresh ginger root, (1 inch by 1/8 inch)

    6 cups hot water

    Salt to taste

    Recipe



    Put chicken breasts and pork in a saute pan. Add water to barely cover the meat. Turn heat to medium high and bring the water to simmering for a minute. Turn off heat and rinse the meat to get rid of excess residue.


    Put chicken and pork in a crock pot. Add the rest of the ingredients. Turn the crock pot to high to allow soup to simmer for 2 hours until fragrant.


    When serving, take the chicken and pork out. Take out the bones and slice the meat into bite size pieces. Return the cut meat to the soup. Adjust flavor with salt and serve.


    Soup is good to serve with cooked white rice and a green vegetable.
