    Irish Harvest Lamb Stew

    1 lbs American lamb leg, well trimmed and cut into 1-inch cubes
    1/4 cup vegetable oil
    2/5 lbs onions, diced small
    1/10 cup flour
    1/2 quarts water or broth
    1/50 cup salt
    1/5 tbsp pepper
    2/5 lbs potatoes, diced medium
    1/3 lbs turnips, diced medium
    1/4 lbs carrots, cut into 1/2-inch slices
    1/3 tbsp fresh parsley (chopped)

    Recipe



    In a large pot, add oil and sauté meat and onions together (over low heat--DO NOT BROWN)
    Add flour to make a roux and stir 3 minutes. Add water or broth.
    Bring to a boil (be sure to stir bottom of pan thoroughly, so it doesn''t stick).
    Add salt and pepper.
    Reduce heat to simmer (for approximately 1 hour). Skim top of stew occasionally with a ladle.
    Add potatoes, turnips, and carrots.
    Continue to simmer for approximately 1/2 hour until meat and vegetables are tender.
    Add just salt and pepper to taste, mix in chopped parsley and serve.

    Prep Time: 15-30 Minutes , Cooking Time: 60 or more Minutes
