    Chicken & Andouille Sausage Gumbo

    List of Ingredients




    1 1/2 cups flour
    3 cups oil
    2 cup chopped onions
    1 cup chopped green bell pepper
    1 cup chopped celery
    2 tablespoon chopped garlic
    4 cups sliced andouille sausage
    4 quarts stock
    4 bay leaves
    Salt and cayenne
    Creole spice
    4 cups shredded cooked chicken meat
    Steamed rice
    Several bunches chopped scallions

    In a large soup pot slowly heat oil and flour together over low heat,
    stirring constantly, until it becomes a dark brown color and is very
    fragrant; be careful not to burn. Add onions, pepper and celery and cook,
    stirring, 4 minutes. Add garlic and andouille and cook 5 minutes, until
    some fat releases from the sausage. Add stock, bay leaf, 2 teaspoons salt,
    cayenne and Creole spice to taste. Bring to a boil, reduce heat and simmer
    for 1 hour. Add chicken and simmer 30 minutes more.

    This recipe is for 12 servings; I usually double or quadruple the recipe.
    Please feel free to add either okra or file but not both, as this is a
    gumbo faux pas.

    There are two non-secrets to making gumbo; 1) the rouux and 2) homemade
    stock. I was taught that unless you are making seafood gumbo, the roux
    should be the color of dark chocolate (I use dark, dark roux for all of my
    gumbos). Always remember that it is very difficult to over stir a roux but
    it is very easy to under stir and burn one. If this is your first roux, I
    suggest burning one first so you know what the specs look like and can
    reference it in the future. The stock is also especially important when
    making a gumbo with any bird. I suggest making a rich chicken stock the
    night before and refrigerating it overnight so the fat is easily removed. I
    start two days before the serving day by making the stock and prepping all
    the ingredients. The night before the serving day I prepare the gumbo.
    Gumbo only gets better when it has 24 hours to get all together. Enjoy!

    Note: Feel free to replace the chicken with Spotted Owl in honor of the
    annual, and soon to be world famous, Southwestern Bell Bayou Bucket
    football game against Rice.
