Pepperoni Pizza Soup

15 ml vegetable oil 1 tbsp
250 ml onion, diced 1 cup
250 ml mushroom, sliced 1 cup
250 ml green or red pepper, diced 1 cup
175 ml ripe tomatoes, diced 3/4 cup
175 ml chicken broth 3/4 cup
125 ml pepperoni slices 1/2 cup
2 ml dried basil 1/2 tsp
125 ml mozzarella cheese, shredded 1/2 cup
Recipe
Heat oil in soup pot over medium heat. Add onion, mushrooms and pepper; stir fry until soft but do not brown. Add tomoatoes, chicken broth, pepperoni slices and basil. Cook for 8 to 10 minutes.
Ladle soup into bowls. Sprinkle cheese on top. Allow cheese to melt before eating.
