    Bourride

    Ingredients:

    # 2T olive oil
    # 1T pastis
    # 2T white wine
    # 1/2T rouille
    # 2T chopped garlic
    # 1 cup vegetable broth
    # 4 mussels
    # 4 clams
    # 4 shrimp
    # 2oz. salmon
    # 2oz. monkfish
    # 1 bulb of fennel (whole with tops)
    # 1 small carrot
    # 1 small onion
    # 1 small plum tomato
    # pinch of saffron
    # 2-3 basil leaves
    # 1-2 sprigs of thyme

    Recipe



    Clean mussels and clams under cold running water to remove grit or sand.

    Julienne fennel, onion, carrot, and tomato.

    In a hot sauté pan, add olive oil, julienne vegetables and garlic. Sauté for 1-2 minutes. Add pastis, white wine and saffron. Reduce by about half and add vegetable broth, thyme, and fennel tops.

    Bring to a boil and then add all seafood.

    Cook until done.

    Place all seafood in serving platter without the broth. In the pan, whisk in rouille. Bring up to temp. Season accordingly and add to serving platter.
