    ROASTED TOMATO SOUP AND POPCORN

    List of Ingredients




    •1 white onion
    •6 large red tomatoes
    •8 roma tomatoes
    •1 can Hunts diced tomatoes with juice
    •2 tbls. olive oil
    •1 to 2 cups heavy cream
    •celery seed
    •salt, black & green pepper to taste
    •popcorn (any type)
    •cheddar cheese (chef prefers white)

    Recipe



    Place a roasting pan in a 400 degree oven. When pan is hot add the oil, whole onion and tomatoes (NOT the can) and cook for about 30 minutes. When done, let cool and chop ingredients, add them to a pot. Add the canned tomatoes, cream and seasonings and cook for another 10 minutes. Puree and cook until desired consistency. Add the popcorn and the cheese to each bowl of soup.

    Serves 4.
