Sweet and Sour Chicken Soup

List of Ingredients
6 C chicken stock (or 6 chicken bouillon cubes and 6 C water)
2 C cooked chicken, diced
1/4 C diced white onion
1 C diced green pepper
1 C diced carrots
1 C snow peapods
1 C baby yellow corn
1 (10-oz.) can water chestnuts (diced and drained)
1 (12-oz.) can pineapple (diced with juice)
1 (12-oz.) jar sweet and sour sauce
3 cloves crushed garlic
2 tsp. parsley flakes
1/2 tsp. white pepper
1/2 tsp. finely chopped ginger
2 small tomatoes (cut into wedges)
2 green onions, finely chopped (green part only)
Recipe
In large stock pot melt butter. Add garlic, ginger, white onions, green peppers, carrots. Cook for a few minutes. Add chicken and chicken stock, pineapple and juice, water chestnuts, corn, snow peas, parsley, white pepper, sweet and sour sauce. Heat and serve. Note: Just before serving, add tomato wedges and top with green onions. Serves 8.
