List of Ingredients
1/2 c. vegetable or canola oil
2 large butternut squash, peeled, seeded and chopped
3 large carrots, peeled and chopped
1/2 small turnip, peeled and chopped
1 medium onion, peeled and chopped
1 c. sherry
2 c. pumpkin puree
1 gallon chicken stock
2 c. heavy cream
Salt, white pepper and cinnamon, to taste
Recipe
Heat the oil in a large stockpot and add the squash, carrots, turnips and onion. Cook for 10 minutes, stirring often. Add the sherry. Cook for 5 minutes more. Add the pumpkin puree and chicken stock. Bring to a boil, reduce to a simmer, and cook for about 45 minutes, until the vegetables are soft. Puree the soup. Add the cream, salt, pepper and cinnamon. Heat through and serve. Makes about 2 gallons.
