Tomato Weed Soup

List of Ingredients
1/2 cup chopped celery (& leaves)
1/2 cup green onion & tops ( or shallots & tops or
chopped white onion)
1 heaping teasp. minced fresh sweet basil
1 teaspoon chopped fresh dill
1 teaspoon minced fresh oregano
1 small zucchini (chopped) (optional)
1/3 cup chopped yellow pepper
1 cups chopped tomatoes (peeled & chop into small
1/2 inch cubes)
1 tbs butter
3-4 cups creamed tomato soup (fresh homemade or canned)
Optional Toppings: Chopped Feta Cheese, fresh chopped
parsley or if in a festive mode you can add eatable florals such
as pansy, violets, nasturtium, or chive flowerettes.
Recipe
In a skillet, melt the butter and saute the first 7 items (celery to pepper)until onions and zucchini are translucent. In a large soup pan warm the tomato soup from homemade source or canned. Divide the sauteed herbs and veggies into serving bowls. Add fresh chopped tomatoes. Pour heated soup into bowls and add assorted toppings. Serve with a crusty bread and enjoy.
