Village of the Smokey Hills Potato Soup

2 slices of bacon, cut in thin strips 2
3 medium onions, thinly sliced 3
6 medium red potatoes, peeled & sliced 6
1 celery stalk, thinly sliced 1
2 carrots, peeled & thinly sliced 2
2 ml salt 1/2 tsp
1 ml thyme leaves 1/4 tsp
- pepper to taste -
1 L chicken broth 4 cup
25 ml fresh parsley, chopped 2 tbspRecipe
Cook bacon in large saucepan until lightly browned. Add onions; cook over medium heat, stirring often, until limp but not browned. Add potatoes, celery, carrots, salt, thyme, pepper, chicken broth and parsley. Bring to a boil. Reduce heat; cover and simmer for 20 to 30 minutes or until potatoes are tender. Puree soup in batches. Pour back into saucepan and heat through.
