    Fritters
    1 cup dried black eyed peas
    1 medium onion, chopped
    1 tsp minced Habanero Chile, minced
    1 large egg
    1 tsp salt
    4 tbsp water
    6 cups vegetable oil

    Relish
    4 red bell peppers
    1 medium onion chopped
    2 plum tomatoes chopped
    1 tbsp minced Habanero Chile
    Salt
    1/4 cup vegetable oil

    Fritters


    Soak peas covered in water for 8 hours.

    Drain in colander.

    Puree peas,onion,and chile in food processor until very smooth.

    Add egg and salt.

    Leave motor running and add water and blend till fluffy.

    You want the batter thin enough to drop from a spoon.

    Heat oil in heavy bottom pan to 365 degrees.

    Drop fritters into oil stirring constantly to prevent from browning to fast.

    Fry till golden brown about two minutes.

    Transfer to paper towel to drain.

    Relish

    Puree bell peppers, onion, tomatoes, chile and salt in food processor.

    Heat oil in heavy duty skillet over high heat.

    Add puree to oil.

    Reduce heat and simmer while stirring, about 8 to 10 minutes.
