    250g couscous
    200ml boiling water
    15ml spoon olive oil
    1 carrot, peeled and finely diced
    4 salad onions, finely chopped
    1 red pepper, deseeded and finely diced
    200g can sweetcorn in water, drained
    420g can chickpeas, rinsed and drained
    15ml spoon cider or white wine vinegar
    ½ x 5ml spoon Dijon mustard
    2 x 5ml spoons bought mayonnaise
    2 x 15ml spoons freshly chopped coriander
    salt and freshly ground black pepper
    250g green beans, cooked to taste

    Recipe



    Place the couscous in a bowl, stir in the water and leave to stand for 5 minutes.

    Meanwhile, heat half the oil in a saucepan, add the carrot, onions and pepper and cook for 3-4 minutes, stirring occasionally.

    Stir the vegetables into the couscous with the sweetcorn and chickpeas.

    Blend the vinegar, mustard, mayonnaise and remaining oil together with the coriander and seasoning to taste.

    Serve the couscous in a 'mound' with the dressing drizzled over the top, with the green beans or another green vegetable.

    Serves: 2 adults 2 children
