    (Gyoza with Dumpling Wrappers)

    List of Ingredients




    Stuffing

    1/4 lb. of natural ground pork

    1/4 lb. of rock shrimp

    1 chipotle chile with adobo sauce

    1 tsp fermented black bean paste

    1 egg

    1 bunch of cilantro or Epazote

    1 tsp of black pepper

    1. Mix all ingredients and let sit for 5-10 minutes.

    2. Lay out dumpling wrapper.

    3. Add mixture inside wrapper. Wet edges of wrapper with water and seal.

    4. Set aside. Add to Dashi broth when ready.


    Dashi Broth

    1 piece (2 by 8 inches, approx.) of Kombu

    1 large piece of ginger

    4 tbsp dried bonito flakes

    1/2 cup of light miso paste

    5 cups of water

    Garnish:

    Fresh scallions and cilantro and lime disc

    Recipe



    1. Wipe Kombu with clean, damp cloth and place in 5 cups of water with ginger slices and bring to a boil.

    2. Remove from heat and let sit for 5 minutes.

    3. Remove kombu and ginger.

    4. Place back on heat and add bonito flakes until they sink to the bottom then strain.

    5. Push and strain miso paste into broth.

    6. You now have master Dashi broth.
