    5 lbs. sweet potatoes
    8 lbs. Steen’s dark molasses
    4 oz. unsalted butter
    1/2 oz. Kosher salt
    4 oz. large pecans
    4 oz. brown sugar

    Recipe



    Peel and chop sweet potatoes into 1-inch by 1-inch pieces. Put into a roasting pan and toss with molasses and brown sugar. Cover with tin foil and roast for approx. 1 hour or until tender. Put potatoes and molasses liquid into mixing bowl and mash. Add salt and top with large roasted pecans.
