    4 large all-purpose potatoes, scrubbed
    1 cup pizza sauce
    1/2 cup shredded mozzarella cheese, divided
    1/2 cup grated Parmesan cheese, divided
    1 teaspoon dried oregano, crumbled
    1 teaspoon salt
    1 teaspoon pepper
    1/4 cup sour cream
    4 slices bacon, cooked and crumbled

    1. Preheat oven to 425°F. Pierce potatoes with a fork. Bake until tender, about 1 hour; cool slightly. While potatoes are baking, in a large bowl, combine pizza sauce, 1/4 cup mozzarella, 1/4 cup Parmesan, the oregano, salt and pepper.

    2. From a long side, slice off about the top quarter of each potato. Carefully scoop out the potato flesh, leaving a 1/ 4-inch-thick shell. Place the flesh in a medium bowl and mash. Add to the pizza sauce mixture; mix well.

    3. Evenly divide potato mixture among shells, mounding slightly. Sprinkle the remaining mozzarella over the filling. Place the potatoes on a baking sheet. Bake until potatoes are heated through and cheese is melted, about 15 minutes.

    4. Top each potato with 1 tablespoon sour cream. Sprinkle with crumbled bacon and the remaining Parmesan. Serve immediately.

    Serves 4
