    1 (10-oz.) pkg. frozen chopped spinach

    4 eggs

    2 cups heavy cream

    ½cup milk

    ½teaspoon salt

    ¼teaspoon pepper

    ½teaspoon garlic powder

    1 small onion, chopped fine (optional)

    2 cups shredded cheddar cheese

    1 cup fine dry bread crumbs

    3 tablespoons butter, melted

    Heat the oven to 375 degrees. Lightly butter a 9-inch-square baking dish.

    Thaw the spinach and drain well. Beat the eggs until frothy, then beat in the cream, milk, salt, pepper and garlic powder. Stir in the spinach, onion and cheese. Pour into the prepared baking dish. Place the dish in a larger pan and pour in enough boiling water to come halfway up the sides. Top with the bread crumbs and drizzle with butter. Bake 45 to 55 minutes, until custard is set. Makes 12 servings.
