    Sweet Corn and Bacon Bread Pudding

    List of Ingredients




    1 Tbs. Butter
    4 slices Farmer John thick sliced Bacon chopped
    1/2 cup Yellow Onion chopped
    1-1/2 cups Corn Kernels
    2 cups Heavy Whipped Cream
    5 Eggs
    1 tsp. Salt
    1/4 tsp. freshly ground Black Pepper
    dash of Tabasco
    1 cup Cheddar Cheese shredded
    8 cups French Bread cut into cubes

    1: Butter a 2 quart rectangular pan. Preheat oven to 350 degrees F.
    2: In a sauté pan cook the bacon over medium hight heat, until crisp. Set aside bacon. Remove all but 2 tablespoons of the bacon grease. Add onions and cook until translucent. Add the corn and cook for two minutes. Set aside.
    3: In a large mixing bowl whip the cream and eggs together. Add salt, pepper, and tabasco. Fold in the corn mixture, cheese, bacon, and bread cubes. Allow the bread to absorb the liquid, resting for about 5 minutes. Bake for 45 minutes or until golden brown. The pudding should be firm and the sides should taper inward. Serve.

    Serves 6.
