    Turkey Stuffing Muffins

    List of Ingredients




    1 cup chicken broth
    1 cup liquid egg substitute
    4 tablespoons butter, melted
    16 slices day old bread cut into 1/2" cubes
    1/2 cup minced scallions
    1/2 cup chopped celery
    1 teaspoon poultry seasoning
    1 cup dried cranberries
    1/4 cup chopped parsley
    1 teaspoon grated lemon peel
    1/2 teaspoon black pepper
    1/4 teaspoon salt

    Preheat the oven to 375 degrees. Coat (16) muffin cups with non-stick cooking spray (don't use paper liners). In a large bowl, combine butter, egg substitute and chicken broth. Add the remaining ingredients, and toss to combine. Set aside 15 minutes. If bread is dry add 1/4 cup warm water. Toss. Mixture should be soft and spongy, but not too mushy. Spoon into muffin cups. Bake 20 to 25 minutes. Makes 8 servings.
