    Surprise your family with this unusual - but wonderful - combination of PEI potatoes and tomatoes, with some cheese, spices and olive oil thrown in for good measure. It's a great way to feed them their vegetables and put smiles on their faces at the same time.
    Makes 4 servings.

    List of Ingredients




    1/2 cup Kraft Cheddar Cheese grated 125ml

    1 19 oz (540 ml can of tomatoes, drained 1

    4 PEI Potatoes 4

    1 garlic clove, minced 1

    to taste salt to taste

    1/4 tsp black pepper 1ml

    3 tbsp olive oil 40ml

    1/4 tsp dried rosemary 1ml

    3-4 large, ripe tomatoes 3-4

    or

    1 tsp dried parsley flakes 5ml

    Scrub potatoes, cut lengthwise into 3''-4'' (7-10cm) sticks. In a bowl, place half the garlic, salt, pepper, oil and all the rosemary. Add potatoes; toss to coat. In a second bowl, place other half of the seasonings - garlic, salt, pepper and oil. Cut tomatoes in chunks and add to second bowl. Spread potatoes in a single layer in a 10'' (25cm) round, microwaveable dish. Cover. Microwave 7 minutes in HIGH stirring once. Top with tomatoes; sprinkle with parsley. Cover. Microwave on HIGH, 3 minutes. Sprinkle with grated cheese. Microwave until cheese is just melted - approx. 1 minute.
