    Black-Eyed Pea baked squash

    5 lbs. yellow squash, sliced
    2 eggs, beaten
    1 c. dry bread crumbs plus additional for
    topping, divided
    1/2 c butter or margarine
    1/4 c sugar
    2 T. chopped onion
    Salt and pepper, to taste

    Recipe



    Cut off tips of squash;ut each into 3- 4
    pieces. Drop squash into a large saucepan with
    enough boiling water to cover.
    Return to a boil, reduce heat;cook until
    tender. Drain in colander and mash.
    Combine mashed squash with beaten eggs, 1 c. dry

    bread crumbs, butter or margarine, sugar, onion,
    salt and pepper.
    Turn into a 3-quart casserole that has been
    lightly greased or coated with nonstick cooking
    spray. Cover with a light layer of bread crumbs.
    Bake at 350 degrees 20-25 min. or until lightly
    browned.

    Serves 10.
