Buttered Leeks

4 medium-size leeks
3 tablespoons butter
Salt and freshly ground pepper
1 tablespoon water, if necessary
Freshly chopped parsley or chervil for garnish Recipe
Cut the leeks into 1/4-inch-thick rounds. Melt the butter in a heavy saucepan over medium heat. When it foams, add the leeks and toss gently to coat with the butter. Season with salt and pepper and add 1 tablespoon water if it seems too dry.
Cover with a piece of parchment paper and a tight fitting lid to keep the steam close to the leeks.
Reduce the heat and cook very gently for about 20 to 30 minutes, or until the leeks are soft and moist.
Stir every now and then. Serve on a warm dish sprinkled with chopped parsley or chervil.
Serves 4 to 6.
