    This makes a delicious snack, or double the recipe for the Burmese-Style Parsley Salad. Use a splatter guard; no matter how well you dry the parsley, it will splatter when it hits the hot oil.

    List of Ingredients




    Vegetable oil for deep-frying

    About 4 cups lightly packed Italian parsley

    Salt to taste

    Fresh lemon juice to taste

    Pour oil into large pot to measure 4 inches deep. Heat oil to 360°. Wash and carefully dry parsley, first in a salad spinner and then with a towel. Pinch off stems where three branches meet.

    Add 1 cup parsley to oil. Fry for about 30 seconds, until leaves curl and turn translucent. Using a slotted spoon, transfer parsley to paper towels to drain. Repeat with remaining parsley. If eating as a snack, season with salt and lemon juice and serve right away.

    Serves 2 to 4
