Giardiniera (marinated vegetables)

2 cups red wine vinegar
2 Tbs. olive oil
2 Tbs. sugar
2 Tbs. chopped parsley
1 tsp. salt
3 tsp. chopped basil or 1/2 to 1 tsp. dried
1 1/2 tsp. chopped oregano or 1/2 to 3/4 tsp. dried
1/2 tsp. freshly ground black pepper
2 cloves garlic, minced
2 1/2 cups broccoli florets (cut in half if large)
2 1/2 cups cauliflower florets (cut in half if large)
2 carrots, peeled and cut into 1/2 inch pieces
2 red or green bell peppers, cored, seeded, cut into 1" pieces
2 cups whole mushrooms, cleaned (I use porcini but white mushroom work just fine)
2 Tbs. lemon juice
Recipe
1. In large saucepan combine vinegar, oil, sugar, parsely, salt, basil, oregano, black pepper, and garlic. Over high heat bring mixture to boil.
2. Add broccoli, cauliflower and carrots. Again bring mixture to boiling and add bell pepper and mushrooms. Remove mixture from heat and cool to room temperature, then stir in lemon juice. Pack into wide mouthed 2 quart jar, pour marinade over top, cover, refrigerate for up to 7 days.
*Works well stored in a large Rubbermaid container as well.
