3 cups shelled peas
1 bunch chopped green onions
1/2 lb. asparagus
8 tbs. extra virgin olive oil
2 cloves garlic minced
2 tbs. butter
1 x 2 inch piece of salt pork
Salt and pepper
Recipe
In Advance:
Make marinade for asparagus of 3 tbs. olive oil, minced garlic and plenty of salt and pepper.
Coat asparagus then charcoal grill (or steam) until tender.
Cut into 1/2" long pieces.
Then:
Warm 5 oz. olive oil and salt pork in a 3-4 quart sauce pan.
Add green onions and cook over low heat until soft (10 minutes).
Add asparagus and peas and mix well.
Add water until mixture is one-half covered by water.
Simmer (with salt pork in pan) for 1 to 1-1/2 hours or until peas are tender — adding small amounts of water as necessary.
Remove salt pork before serving.
Serves 6.
