    Fried Green Beans with Coconut

    4 tbsp Butter

    1 teasp Black Mustard Seeds

    75g/3oz Onion, finely chopped

    1 teasp Freshly grated Ginger

    1 teasp Salt

    Freshly Ground Black Pepper

    450g/1lb Fresh Green Beans, thinly sliced on the diagonal

    1/4 teasp Paprika

    25g/1oz Unsweetened Shredded (desiccated) Coconut

    2 tbsp Freshly chopped Coriander

    2 tbsp Lemon Juice

    Recipe



    1. Heat the butter in a large frying pan or wok over moderate heat hot.



    2. Add the mustard seeds and fry for 30 seconds.



    3. Stir in the onions, ginger, salt and pepper, mix well then add the green beans and paprika and stir-fry for 5 minutes.



    4. Add the coconut and coriander, reduce the heat to low, cover and cook for 10 minutes stirring from time to time, until the beans are tender.



    5. Sprinkle with lemon juice, adjust the seasoning if necessary and serve immediately.

    Serves 4
