List of Ingredients
¼ cup sesame oil, toasted
2 Tbs. minced garlic
2 tsp. fresh ginger, minced
1 cup slightly steamed burdock root (Asian root vegetable) thinly sliced diagonally
1 cup carrots cut diagonally
1 cup celery cut diagonally
½ green bell pepper, thinly sliced
¼ lb. snow peas
1 lb. baked firm tofu, cubed
2 cups cooked basmati rice
½ cup sliced water chestnuts
1 Tbs. black sesame seeds
¼ cup tamari
1 cup bean sprouts
1 cup broccoli florets
2 cups fresh spinach, cut into thin strips
6 slices lotus root, pan searedRecipe
1. Heat oil in wok or sauté pan
2. Add garlic and ginger and stir-fry about 1 minute.
3. Add next ten ingredients and continue to stir-fry 3-5 minutes.
4. Add the bean sprouts, broccoli and spinach and continue to stir-fry for 1 minute.
5. Garnish with lotus root slices.
Serves 6.
