    “Where’s the beef?” is a line from a commercial long ago. Well, you might ask, where’s the beef in this recipe? You won’t miss it a bit since seitan has a great meaty texture and a rich flavor. Seitan is a complex protein that is abundant in hard wheats like durum. The meaty texture is so incredible that some vegetarians just won’t eat it. It makes a great tool in your efforts to reduce fat and cholesterol intake so you can live longer to ride that Harley longer. You will find seitan and health food and specialty food stores or the organic food and produce sections of upscale supermarkets, often next to the tofu.

    List of Ingredients




    1/3 cup light soy sauce
    1 tablespoon cornstarch
    1/4 teaspoon cayenne pepper
    1/4 cup extra-virgin olive oil
    One 8-ounce package seitan, drained and cut into bite-size pieces
    1 medium-size onion, cut into matchsticks
    8 baby carrots, cut into matchsticks
    1 red bell pepper, seeded and cut into matchsticks
    3 scallions, ends trimmed and cut into ½-inch-thick slices
    2 stalks broccoli, cut into bite-size florets
    2 tablespoons chopped garlic
    1 tablespoon peeled and minced fresh ginger

    Recipe



    1. In a small bowl, combine the soy sauce, cornstarch and cayenne, stir well, and set aside.
    2. Heat the olive oil in a large wok over high heat. Add the seitan and stir-fry until it begins to brown, 3 to 5 minutes. Add the onion and carrots and stir-fry for 2 minutes. Add the red bell pepper, scallions, broccoli, garlic and ginger and stir-fry until the broccoli turns dark green but is still crispy, 3 to 5 minutes. Add the soy sauce mixture, toss well to coat, stir-fry for 1 minute, and serve immediately.
    Makes 4 servings
