    Bruschetta w/ Broad Bean Puree

    500g fresh broad beans
    2 cloves garlic
    2 tablespoons mint, finely shredded
    1/3 cup extra virgin olive oil
    4 slices prosciutto
    4 slices crusty Italian bread, (like ciabatta)

    Recipe



    Preheat oven to 160°C or 140°C fan-forced.

    Split the raw broad beans down the centre and peel. Bring a pot of salted water to the boil and drop in the beans. Cook for 1-2 minutes before draining.

    Chop one of the cloves of garlic and add to the beans along with the mint and olive oil. Mash until a coarse consistency.

    Place prosciutto on baking tray and cook in preheated oven 15 minutes or until crisped evenly. Toast bread on grill plate or in toaster if preferred. Rub bread with remaining garlic. Top with broad beans and crisp prosciutto.
