Bruschetta with Tomatoes and Feta

What better way to celebrate summer than by feasting on sun-ripened local tomatoes? Serve with grilled zucchini, summer squash, bell peppers or eggplant; grilled turkey sausages.
List of Ingredients
2 or 3 - large vine-ripened tomatoes, seeded and diced
6 to 8 - fresh basil leaves, sliced
1 tbsp. olive oil
1 clove garlic, cut in half
2 to 4 - thick slices French country bread, cut in half
2 oz. crumbled feta, ricotta salata or goat cheese
Recipe
1 In a bowl, combine tomatoes, basil and oil. Season with salt and freshly ground black pepper.
2 Preheat an outdoor grill or stovetop grill pan. Rub garlic over bread slices. Spray with olive oil cooking spray. Grill bread until toasted and warm.
3 Set bread slices on serving plate. Top each with a mound of tomatoes and sprinkle with cheese.
