    To boost flavor, stir in a tablespoon or two of fragrant extra virgin olive oil before serving.

    List of Ingredients




    3/4 cup (5 oz/150 g) dried chickpeas (garbanzos), soaked overnight, or 2 cups (12 oz/360 g) canned chickpeas
    1/4 cup (2 fl oz/60 ml) water
    1/4 cup (2 fl oz/60 ml) fresh lemon juice
    2 tablespoons low-fat silken tofu
    1/2 teaspoon chopped fresh garlic
    1/8 teaspoon cayenne pepper
    1/8 teaspoon sea salt
    1 tablespoon chopped fresh parsley

    Recipe



    1 If using dried chickpeas, place in a saucepan, cover with water and bring to a boil. Simmer, adding more water as needed, until tender, about 1 hour 15 minutes. Drain. If using canned chickpeas, drain and rinse.
    2 In a food processor, combine chickpeas, water, lemon juice, tofu, garlic, cayenne and salt. Process until smooth.
    3 Transfer hummus to a bowl. Garnish with parsley.
