Kicked-Up Black Bean Salsa
1 1/2 cups cooked black beans (drained if canned)
3/4 cup peeled, seeded and chopped fresh tomatoes
1/2 cup finely chopped green onions
1/2 cup finely chopped yellow bell pepper
1/4 cup finely chopped fresh cilantro
2 tablespoons fresh lime juice
2 tablespoons olive oil
2 tablespoons chopped chipotle chili in adobo sauce, or less to taste
1 1/2 teaspoons minced garlic
1/4 teaspoon salt
Pinch cayenne
Recipe
In a mixing bowl, combine all of the ingredients. Adjust the seasoning to taste, cover and refrigerate for 1 hour before serving.
Yield: Makes about 3 cups
