    1-3/4 cups chicken broth
    1 cup couscous
    1/3 cup toasted walnuts, chopped
    2 Tbs. red bell pepper, finely diced
    1 Tbs. Italian parsley, minced
    pepper to taste

    Recipe



    Bring chicken broth to a boil in a small saucepan. Add remaining ingredients, and stir to blend. Cover and remove from heat. Let stand for five to 10 minutes or until all the liquid has been absorbed. Fluff with a fork before serving.

    * Note: A wonderful last-minute side dish, couscous requires little attention and works well with a number of complementary ingredients such as tomato, peppers, herbs, pesto, etc. Couscous is semolina grain that has been rolled, dampened and coated with fine wheat flour.

    Yield: 4 servings
