1 medium brown onion, chopped
2 tsp minced garlic
� tsp minced chilli
1 x 400g can diced tomatoes
450g can refried beans
100g Weight Watchers reduced-fat shredded cheese
2 x 100g packet rice crackers, pizza flavour
80ml light sour cream
Recipe
Coat a pan with cooking spray, heat and add the onion, garlic and chilli. Cook for about 2 minutes or until the onion is softened. Stir in the tomatoes and beans. Heat through.
Preheat oven to 200 �C
Arrange 20 rice crackers onto each of 4 flat oven proof dishes. Sprinkle evenly with the cheese. Top each plate with � of the bean mixture. Place in the oven and bake for about 5 minutes or until cheese is melted. Top with the sour cream and serve
