    1/2 x 250g Betty Crocker Bisquick all purpose baking mix
    1 medium egg, beaten
    300ml whole milk
    1 eating apple, peeled, cored and grated
    1 x 195g jar Sharwood's spicy tomato Szechuan sauce
    50g sultanas
    15ml sunflower oil for frying

    to serve
    to serve:
    150ml pot low-fat natural yoghurt
    15ml spoon demerara sugar
    ¼ x 5ml spoon ground cinnamon

    Recipe



    Make up the batter mix for the pancakes according to the pack instructions using the egg and milk. Add the grated apple, ground cinnamon and sultanas, and stir to combine.

    Heat a little oil in a 23cm frying pan over a medium heat. Add 2 x 15ml spoons of the mixture and cook on both sides until golden brown. Slide the cooked pancake onto a warmed plate to keep warm while you cook the remaining pancake batter. This mix should make about 8-10 pancakes.

    To serve, stack the pancakes on four plates, sprinkle with the demerara sugar and a little extra cinnamon, and top with spoonfuls of the natural yoghurt. Delicious with slices of fresh apple.
