    This Dutch treat is delicious at breakfast, brunch or even as a late-night snack. Cut the pancake into wedges and serve directly from the skillet

    List of Ingredients




    - - DUTCH PANCAKE
    - - Cooking spray
    1/2 cup (2 oz/60 g) oat flour, whole-wheat pastry flour or all-purpose flour
    2 tablespoons natural cane sugar
    1/2 teaspoon baking powder
    1/2 cup (4 fl oz/120 ml) fat-free egg product
    1/2 cup (4 fl oz/120 ml) 1% vanilla soy milk
    2 tablespoons unsweetened applesauce
    1 teaspoon pure vanilla extract
    2 - large apples, cored, peeled and thinly sliced
    3 tablespoons pure maple syrup
    1/4 teaspoon ground cinnamon
    1 - vanilla bean, split lengthwise

    Recipe



    1 To make dutch pancake: Preheat oven to 375 degrees F (190 degrees C). Spray a 10-inch (25-cm) nonstick ovenproof skillet once with cooking spray.
    2 In a bowl, whisk together flour, sugar and baking powder.
    3 In a separate bowl, beat egg product with an electric mixer until fluffy. Beat in soy milk, applesauce and vanilla. Gently fold in dry ingredients.
    4 Pour batter into prepared skillet. Bake in the oven until pancake is golden and fluffy, about 20 minutes.
    5 To make sauteed apples: While pancake is baking, combine apples, maple syrup, cinnamon and vanilla bean in a medium sauté pan. Cover and cook over low heat until apples are soft, about 10 minutes. Remove vanilla bean.
    6 Serve pancake warm with sautéed apples and additional maple syrup, if desired, or dust with confectioners' sugar.
