    List of Ingredients




    8 large eggs
    1/2 tsp salt
    1/4 tsp pepper
    1 tsp olive oil
    1 large tomato, diced
    8 flour tortillas, lowfat or regular, warmed
    2 cups shredded romaine lettuce
    1/2 cup shredded Monterey Jack cheese
    4 strips bacon, cooked crisp, drained and crumbled
    1/4 cup sliced scallions

    Accompaniments:
    Salsa and sour cream

    Recipe



    1. Whisk eggs, salt and pepper in a medium bowl to blend. Heat oil in a large nonstick skillet. Add eggs and scramble until cooked. Remove from heat; fold in tomato.

    2. Line tortillas with shredded lettuce. Top with egg mixture, cheese, bacon and scallions. Roll up or fold to enclose filling. Serve with salsa and sour cream.
